Tea Breads, Buns And Muffins Recipes - Whole meal Scones

Ingredients

  • 175g/3/4 cup cold butter

  • 350g/3 cups whole meal flour

  • 150g/1 1/4 cups plain flour

  • 30ml/2 tbsp sugar

  • 2.5ml/1/2 tsp salt

  • 12.5ml/2 1/2 tsp bicarbonate of soda

  • 2 eggs

  • 175g/3 3/4 cup buttermilk

  • 35g/1/4 cup raisins


Method:

  1. Preheat the oven to 200C/400F/Gas 6. Grease and flour a large baking sheet.

  2. Cut the butter into small pieces. Combine all the dry ingredients in a bowl. Add the butter and rub in until the mixture resembles coarse bread crumbs. Set aside.

  3. In another bowl, whisk together the eggs and buttermilk Set aside 30ml/2 tbsp for glazing, then stir the remaining egg mixture into the dry ingredients until it just holds together. Stir in the raisins.

  4. Roll out the dough to about 2cm/3/4in thickness. Stamp out circles with a biscuit cutter. Place on the baking sheet and brush with the glaze.

  5. Bake until golden, about 12 -15 minutes. Allow to cool slightly before serving.
