Tea Breads, Buns And Muffins Recipes - Sweet Sesame Loaf

Ingredients

  • 75g/6 tbsp sesame seeds

  • 275g/2 1/2 cups plain flour

  • 12.5ml/2 1/2 tsp baking powder

  • 5ml/1 tsp salt

  • 50g/4 tbsp butter or margarine, at room temperature

  • 130g/2/3 cup sugar

  • 2 eggs, at room temperature

  • grated rind of 1 lemon

  • 350ml/1 1/2 cups milk


Method:

  1. Preheat the oven to 180C/350F. Carefully line a 23 x 13cm/9 x 5in loaf tin with greaseproof paper and then grease the paper.

  2. Reserve 25g/2 tbsp of the sesame seeds. Spared the rest on a baking sheet and bake in the oven until lightly toasted, about 10 minutes.

  3. Sift the flour, baking powder and salt into a bowl. Stir in the toasted sesame seeds and set aside.

  4. Cream the butter or margarine and sugar together until light and fluffy. Beat in the eggs, then stir in the lemon rind and milk. Pour the milk mixture over the dry ingredients and fold in with a large metal spoon until just blended.

  5. Pour the mixture into the tin and sprinkle over the sesame seeds. Bake until a skewer inserted in the centre comes out clean, about 1 hour. Cool in the tin for 10 minutes. Turn out ton to a wire rack to cool completely.
