Tea Breads, Buns And Muffins Recipes - Scones

Ingredients

  • 225g/2 cups plain flour

  • 15ml/1 tbsp baking powder

  • 50g/4 tbsp butter, diced

  • 1 egg, beaten

  • 75ml/5 tbsp milk

  • 1 beaten egg, to glaze


Method:

  1. Preheat the oven to 220C/425F/Gas 7. Lightly butter a baking sheet. Sift the flour and baking powder together, then rub in the butter.

  2. Make a well in the centre of the flour mixture, add the egg and milk and mix to a soft dough using a round-bladed knife.

  3. Turn out the scone dough on to a floured surface, and knead very lightly until smooth.

  4. Roll out the dough to about a 2cm/3/4in thickness and cut into 10 or 12 circles using a 5cm/2in plain or fluted cutter dipped in flour.

  5. Transfer to the baking sheet, brush with egg, then bake for about 8 minutes, until risen and golden. Cool slightly on a wire rack before serving.
