Method:

Preheat the oven
to 220C/425F/Gas 7. Lightly butter a baking sheet.
Sift the flour and baking powder together, then rub
in the butter.

Make a well in
the centre of the flour mixture, add the egg and
milk and mix to a soft dough using a round-bladed
knife.

Turn out the
scone dough on to a floured surface, and knead very
lightly until smooth.

Roll out the
dough to about a 2cm/3/4in thickness and cut into 10
or 12 circles using a 5cm/2in plain or fluted cutter
dipped in flour.

Transfer to the
baking sheet, brush with egg, then bake for about 8
minutes, until risen and golden. Cool slightly on a
wire rack before serving.
