Tea Breads, Buns And Muffins Recipes - Raisin Bran Buns

Ingredients

  • 50g/4 tbsp butter or margarine

  • 40g/1/3 cup plain flour

  • 50g.1.2 cup whole meal flour

  • 7.5ml/1 1/2 tsp bicarbonate of soda

  • 1.5ml/1/4 tsp salt

  • 5ml/1 tsp ground cinnamon

  • 25g/generous 1 cup bran

  • 75g/generous 1/2 cup raisins

  • 65g/1/2 cup dark brown sugar

  • 50g/1/4 cup caste sugar

  • 1 egg

  • 250ml/1 cup butter milk

  • juice of 1/2 lemon


Method:

  1. Preheat the oven to 200C/400F/Gas 6. Lightly grease 15 bun-tray cups. Put the butter or margarine in a saucepan and melt over a gentle heat. Set aside.

  2. In a mixing bowl, sift together the flours, bicarbonate of soda, salt and cinnamon. Add the bran, raisins and sugars and stir until blended.

  3. In another bowl, mix together the egg, buttermilk, lemon juice and melted butter. Add the buttermilk mixture to the dry ingredients and stir in lightly and quickly until just moistened. Do not mix until smooth.

  4. Spoon the mixture into the prepared bun-tray cups, filling them almost to the top. Half-fill any empty cups with water. Bake until golden, about 15-20 minutes. Remove to a wire rack to cool slightly or serve immediately.
