Recipes - Raisin Bran Buns
Ingredients
50g/4 tbsp butter or margarine
40g/1/3 cup plain flour
50g.1.2 cup whole meal flour
7.5ml/1 1/2 tsp bicarbonate of soda
1.5ml/1/4 tsp salt
5ml/1 tsp ground cinnamon
25g/generous 1 cup bran
75g/generous 1/2 cup raisins
65g/1/2 cup dark brown sugar
50g/1/4 cup caste sugar
1
egg
250ml/1 cup butter milk
juice of 1/2 lemon
Method:
Preheat the oven
to 200C/400F/Gas 6. Lightly grease 15 bun-tray
cups. Put the butter or margarine in a saucepan and
melt over a gentle heat. Set aside.
In a mixing bowl,
sift together the flours, bicarbonate of soda, salt
and cinnamon. Add the bran, raisins and sugars and
stir until blended.
In another bowl,
mix together the egg, buttermilk, lemon juice and
melted butter. Add the buttermilk mixture to the dry
ingredients and stir in lightly and quickly until
just moistened. Do not mix until smooth.
Spoon the mixture
into the prepared bun-tray cups, filling them almost
to the top. Half-fill any empty cups with water.
Bake until golden, about 15-20 minutes. Remove to a
wire rack to cool slightly or serve immediately.
