Tea Breads, Buns And Muffins Recipes - Prune And peel Rock Buns

Ingredients

  • 225g/2 cups plain flour

  • 10ml/2 tsp baking powder

  • 75g/1/2 cup demerara sugar

  • 50g/1/2 cup chopped ready-to-eat dried prunes

  • 50g/1/3 cup chopped mixed peel

  • finely grated rind of 1 lemon

  • 50ml/1/4 cup sunflowers oil

  • 75ml/5 tbsp skimmed milk


Method:

  1. Preheat the oven to 200C/400F. Lightly oil a large baking sheet. Sift together the flour and baking powder, then stir n the sugar, prunes, peel and lemon rind.

  2. Mix the oil and milk, then stir into the mixture, to make a dough which just binds together.

  3. Spoon into rocky heaps on the baking sheet and bake for 20 minutes, until golden. leave to cool on a wire rack.
