Ingredients

  • 1 egg

  • 252ml/1 cup milk

  • 120ml/1/2 cup vegetable oil

  • 45g/1/4 cup caster sugar

  • 25g/2 tbsp dark brown sugar

  • 275g/2 1/2 cups plain flour

  • 10ml/2 tsp baking powder

  • 2.5ml/1/2 tsp salt

  • 1.5ml/1/4 tsp grated nutmeg

  • 115g/1/2 cup cooked stoned prunes, chopped


Method:

  1. Preheat the oven to 200C/400F/Gas 6. Grease a 12-cup muffin tin or use paper cases.

  2. Break the egg into a mixing bowl and beat with a fork. Beat in the milk and oil Stir in the sugars and set aside.

  3. Sift the flour, baking powder, salt and nutmeg into a mixing bowl. Make a well in the centre, pour in the egg mixture and stir until moistened. Do not over mix; the batter should be slightly lumpy. Finally, fold in the prunes.

  4. Fill the prepared cups two-thirds full. Bake until golden brown, about 20 minutes. Leave to stand for 10 minutes before turning out. Serve warm or at room temperature.
