Recipes - Orange and Raisin Scones
Ingredients
275g/2 1/2 cups plain flour
25ml/1 1/2 tsp baking powder
60g/generous 1/4 cup sugar
2.5ml/1/2 tsp salt
65g/5 tbsp butter, diced
65g/5 tbsp margarine, diced
grated rind of 1 large orange
50g/1/2 cup raisins
120ml/1/2 cup buttermilk
milk, to glaze
Method:
Preheat the oven
to 220C/425F /Gas 7. Grease and flour a large
baking sheet.
Combine the dry
ingredients in a large bowl. Add the butter and
margarine and rub in until the mixture resembles
coarse breadcrumbs.
Add the orange
rind and raisins. Gradually stir in the buttermilk
to form a soft dough. Roll out the dough to about a
2cm/3/4in thickness. Stamp out circles with a
biscuit cutter. Place on the baking sheet and brush
the tops with milk.
Bake until
golden, about 12-15 minutes. Serve hot or warm, with
butter, or whipped or clotted cream and jam.
