Tea Breads, Buns And Muffins Recipes - Orange and Raisin Scones

Ingredients

  • 275g/2 1/2 cups plain flour

  • 25ml/1 1/2 tsp baking powder

  • 60g/generous 1/4 cup sugar

  • 2.5ml/1/2 tsp salt

  • 65g/5 tbsp butter, diced

  • 65g/5 tbsp margarine, diced

  • grated rind of 1 large orange

  • 50g/1/2 cup raisins

  • 120ml/1/2 cup buttermilk

  • milk, to glaze


Method:

  1. Preheat the oven to 220C/425F /Gas 7. Grease and flour a large baking sheet.

  2. Combine the dry ingredients in a large bowl. Add the butter and margarine and rub in until the mixture resembles coarse breadcrumbs.

  3. Add the orange rind and raisins. Gradually stir in the buttermilk to form a soft dough. Roll out the dough to about a 2cm/3/4in thickness. Stamp out circles with a biscuit cutter. Place on the baking sheet and brush the tops with milk.

  4. Bake until golden, about 12-15 minutes. Serve hot or warm, with butter, or whipped or clotted cream and jam.
