Tea Breads, Buns And Muffins Recipes - Orange And Honey Tea Bread

Ingredients

  • 385f/3 1/2 cups plain flour

  • 12.5ml/1/2 tsp baking powder

  • 2.5ml/1/2 tsp bicarbonate of soda

  • 2.5ml/1/2 tsp salt

  • 25g/2 tbsp margarine

  • 250ml/1 cup clear honey

  • 1 egg, at room temperature, lightly beaten

  • 25ml/1 1/2 tbsp grated orange rind

  • 175ml/3/4 cup freshly squeezed orange juice

  • 115g/1 cup chopped walnuts


Method:

  1. Preheat the oven to 160C/325F. Line the base and sides of a 23 x 13cm/9 x 5in loaf tin with greaseproof paper and then lightly grease the paper.

  2. Sift the flour, baking powder, bicarbonate of soda and salt together in bowl.

  3. Cram the margarine until soft. Stir in the honey until blended, the stir in the egg. Add the orange rind and stir to combine thoroughly.

  4. Fold the flour mixture into the honey and egg mixture in three batches, alternating with the orange juice. Stir in the chopped walnuts.

  5. Pour into the prepared tin and bake until a skewer inserted in the centre comes out clean, about 60-70 minutes. Leave for 10 minutes before turning out on to a wire rack to cool completely.
