Ingredients

  • 75g/1 cup rolled oats

  • 250ml/1 cup buttermilk

  • 115g/1/2 cup butter, at room temperature

  • 75g/1/2 cup dark brown sugar, firmly packed

  • 1 egg, at room temperature

  • 115g/ 1 cup flour

  • 5ml/1 tsp baking powder

  • 1.5ml/1/4 tsp baking soda

  • 15g/1/4 cup rains


Method:

  1. In a bowl, combine the oats and buttermilk and leave to soak for 1 hour.

  2. Grease a 12-cup muffin pan or use paper cases.

  3. Preheat the oven to 200C/400F/Gas 6. With an electric mixer, cream the butter and sugar until light and fluffy. Beat in the egg.

  4. In another bowl, sift together the flour, baking powder, bicarbonate of soda, and salt. Stir into the butter mixture, alternating with the oat mixture. Fold in the raisins. Do not over mix.
