Oatmeal Buttermilk Muffins
Ingredients
75g/1 cup rolled oats
250ml/1 cup buttermilk
115g/1/2 cup butter, at room temperature
75g/1/2 cup dark brown sugar, firmly packed
1
egg, at room temperature
115g/ 1 cup flour
5ml/1 tsp baking powder
1.5ml/1/4 tsp baking soda
15g/1/4 cup rains
Method:
In a bowl,
combine the oats and buttermilk and leave to soak
for 1 hour.
Grease a 12-cup
muffin pan or use paper cases.
Preheat the oven
to 200C/400F/Gas 6. With an electric mixer, cream
the butter and sugar until light and fluffy. Beat in
the egg.
In another bowl,
sift together the flour, baking powder, bicarbonate
of soda, and salt. Stir into the butter mixture,
alternating with the oat mixture. Fold in the
raisins. Do not over mix.
