Tea Breads, Buns And Muffins Recipes -Fruity Tea Bread

Ingredients

  • 225g/2 cups plain flour

  • 115g/1/2 cup caser sugar

  • 15ml/1 tbsp baking powder

  • 2.5ml/1/2 tsp salt t

  • grated rind of 1 large orange

  • 160ml/2/3 cup fresh orange juice

  • 2 eggs, lightly beaten

  • 75f/6 tbsp butter or margarine, melted

  • 115g/1 cup fresh cranberries or bilberries

  • 50g/1/2 cup chopped walnuts


Method:

  1. Preheat the oven to 180C/350G. Then line a 23 x 13cm/9 x 5in loaf tin with greaseproof paper and grease the paper.

  2. Sift the flour, sugar, baking powder and salt into a mixing bowl. Then stir in the orange rind. Make a well in the centre and add the fresh orange juice, eggs and melted butter or margarine. Stir from the centre until the ingredients are blended; to not over mix. Add the berries and walnuts and stir until blended.

  3. Transfer the mixture to the prepared tin and bake until a skewer inserted in the centre of the loaf comes out clean, about 45-50 minutes. Leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
