Tea Breads, Buns And Muffins Recipes - Crunchy Muesli Muffins

Ingredients

  • 150g/1 1/4 cups plain flour

  • 12.5ml/2 1/2 tsp baking powder

  • 30ml/2 tbsp caster sugar

  • 200g/1 1/2 cups toasted oat cereal with raisins

  • 250ml/1 cup milk

  • 50g/4 tbsp butter, melted, or corn oil

  • 1 egg, beaten


Method:

  1. Preheat the oven to 200C/400F/Gas 6. Grease 10 cups of a muffin tin or use paper cases.

  2. Sift the flour, baking powder and sugar together into a large bowl. Add the oat cereal and stir to blend.

  3. In a separate bowl, combine the milk, melted butter or corn oil and the beaten egg. Add to the dry ingredients. Stir until moistened, but do not over mix.

  4. Spoon the mixture into the cups, leaving room for the muffins to rise. Half-fill any empty cups with water. Bake in the oven for 20 minutes, or until golden brown. Transfer to a wire rack to cool.
