Tea Breads, Buns And Muffins Recipes - Cherry Marmalade Muffins

Ingredients

  • 225g/2 cups self-raising flour

  • 5ml/1 tsp ground mixed spice

  • 75g/1/2 cup caster sugar

  • 115g/1/2 cup glace cherries, quartered

  • 30ml/2 tbsp orange marmalade

  • 150ml/2/3 cup milk

  • 50g/4 tbsp sunflower margarine

  • marmalade, to glaze


Method:

  1. Preheat the oven to 200C/400F. Lightly grease 12 deep muffin cups with oil.

  2. Sift together the flour and spice, then stir in the sugar and glace cherries.

  3. Mix the marmalade with the milk and beat into other dry ingredients with the margarine. Spoon into the greased cups. Bake for 20-25 minutes, until golden brown and firm.

  4. Turn out on to a wire rack and brush the tops of the muffins, with warmed marmalade.
