Recipes - Cheese and Chive Scones
Ingredients
115g/1 cup self-raising flour
150g/1 cup whole meal self-raising flour
2.5ml/1/2 tsp salt
75g/3oz feta cheese
15ml/1 tbsp chopped fresh chives
150ml/2/3 cup milk, plus extra to glaze
1.5ml/1/4 tsp cayenne pepper
Method:
Preheat the oven
to 200C/400F/Gas 6. Sift the flours and salt into
a mixing bowl. Add any bran left in the sieve.
Crumble the feta
cheese and rub into the dry ingredients. Stir in the
chives, then add the milk and mix to a soft dough.
Turn out on
to a floured surface and lightly knead until
smooth. Roll out to a 2cm/3/4in thickness
and stamp out scones with a 6cm/2 1/2in biscuit
cutter.
Transfer the scones to a
non-stick baking sheet. Brush with milk, then
sprinkle over the cayenne pepper. Bake in the
oven for 15 minutes, or until golden brown.
Serve warm or cold.
