Tea Breads, Buns And Muffins Recipes - Cheese and Chive Scones

Ingredients

  • 115g/1 cup self-raising flour

  • 150g/1 cup whole meal self-raising flour

  • 2.5ml/1/2 tsp salt

  • 75g/3oz feta cheese

  • 15ml/1 tbsp chopped fresh chives

  • 150ml/2/3 cup milk, plus extra to glaze

  • 1.5ml/1/4 tsp cayenne pepper


Method:

  1. Preheat the oven to 200C/400F/Gas 6. Sift the flours and salt into a mixing bowl. Add any bran left in the sieve.

  2. Crumble the feta cheese and rub into the dry ingredients. Stir in the chives, then add the milk and mix to a soft dough.

  3. Turn out on to a floured surface and lightly knead until smooth. Roll out to a 2cm/3/4in thickness and stamp out scones with a 6cm/2 1/2in biscuit cutter.

  4. Transfer the scones to a non-stick baking sheet. Brush with milk, then sprinkle over the cayenne pepper. Bake in the oven for 15 minutes, or until golden brown. Serve warm or cold.
