Tea Breads, Buns And Muffins Recipes - Carrot Buns

Ingredients

  • 175g/3/4 cup margarine, at room temperature

  • 90g/generous 1/2 cup dark brown sugar

  • 1 egg, at room temperature

  • 15ml/1 tbsp water

  • 225g/1 1/2 cups grated carrots

  • 15g/1 1/4 cups plain flour

  • 5ml/1 tsp baking powder

  • 2.5ml/1/2 tsp bicarbonate of soda

  • 5ml/1 tsp ground cinnamon

  • 1.5ml/1/4 tsp grated nutmeg

  • 2.5ml/1/2 tsp salt


Method:

  1. Preheat the oven to 180C/350F/Gas 4. Grease a 12-cup bun tray or use paper cases.

  2. With an electric mixer, cream the margarine and sugar until light and fluffy. Beat in the egg and water, then stir in the carrots.

  3. Sift over the flour, baking powder, bicarbonate of soda, cinnamon, nutmeg and salt. Stir to blend.

  4. Spoon the mixture into the prepared bun tray, filling the cups almost to the top. Bake until the tops spring back when touched lightly, about 35 minutes. Leave to stand for about 10 minutes in the bun tray before transferring to a wire rack to cool completely.
