Tea Breads, Buns And Muffins Recipes - Buttermilk Scones

Ingredients

  • 225g/2 cups plain flour

  • 5ml/1 tsp baking powder

  • 2.5ml/1/2 tsp bicarbonate of soda

  • 5ml/1 tsp salt

  • 50g/4 tbsp butter or margarine, chilled

  • 175ml/3/4 cup buttermilk


Method:

  1. Preheat the oven to 220C/425F/Gas 7. Sift the flour, baking powder, bicarbonate of soda and salt into a mixing bowl. Cut in the butter or margarine with a fork until the mixture resembles coarse breadcrumbs.

  2. Add the buttermilk and mix until well combined to form a soft dough. Turn the dough on to a lightly floured surface and knead for about 30 seconds.

  3. Roll out the dough to a 1cm/1/2in thickness. Use a floured 6cm/2 1/2in pastry cutter to cut out rounds. Transfer the rounds to a baking sheet and bake until golden brown, about 10­12 minutes. Serve hot with butter and honey.
