Ingredients
115g/1 cup plain flour
15ml/1 tbsp baking powder
pinch of salt
65g/1/4cup light brown sugar
1
egg
175ml/3/4 cup milk
45ml/3 tbsp vegetable oil
10ml/2 tsp ground cinnamon
115g/2/3 cup fresh or thawed frozen blueberries
Method:
Preheat the oven
to 190C/375F. Lightly grease 8 deep muffin cups.
With an electric
mixer, beat the first eight ingredients together
until smooth. Fold in the blueberries.
Spoon the mixture
into the prepared muffin cups filling them
two-thirds full. Bake until golden brown and a
skewer inserted into the centre of a muffin comes
out clean, about 25 minutes.
Let the muffins
coo in the cups on a wire rack for about 10 minutes,
then unmould them on the wire rack and allow to cool
completely, to serve slightly warm.
