Tea Breads, Buns And Muffins Recipes - Blueberry And Cinnamon Muffins

Ingredients

  • 115g/1 cup plain flour

  • 15ml/1 tbsp baking powder

  • pinch of salt

  • 65g/1/4cup light brown sugar

  • 1 egg

  • 175ml/3/4 cup milk

  • 45ml/3 tbsp vegetable oil

  • 10ml/2 tsp ground cinnamon

  • 115g/2/3 cup fresh or thawed frozen blueberries


Method:

  1. Preheat the oven to 190C/375F. Lightly grease 8 deep muffin cups.

  2. With an electric mixer, beat the first eight ingredients together until smooth. Fold in the blueberries.

  3. Spoon the mixture into the prepared muffin cups filling them two-thirds full. Bake until golden brown and a skewer inserted into the centre of a muffin comes out clean, about 25 minutes.

  4. Let the muffins coo in the cups on a wire rack for about 10 minutes, then unmould them on the wire rack and allow to cool completely, to serve slightly warm.
