Bilberry Tea Bread
Ingredients
50g/4 tbsp butter or margarine, at room temperature
175g/3/4 cup caster sugar
1
egg, at room temperature
120ml/1/2 cup milk
225g/2 cups plain flour
10ml/2 tsp baking powder
2.5ml/1/2 tsp salt
275g/3/4 cup fresh bilberries, or blueberries
FOR THE
TOPPING
115g/1/2 cup sugar
40g/1/3 cup plain flour
2.5ml/1/2 tsp ground cinnamon
50g/4 tbsp butter, cut into pieces
Method:
Preheat the oven
to 190C/375F. Grease a 23cm/9in baking dish.
With an electric
mixer, cram the butter or margarine with the sugar
until light and fluffy. Add the egg, beat to combine
the mix in the milk until well blended.
Sift over the
flour, baking powder and salt and stir just enough
to blend the ingredients. Add the berries and stir.
Transfer to the baking dish.
For the topping,
place the sugar, flour, cinnamon and butter in a
mixing bowl. Cut in with a pastry blender until the
mixture resembles coarse breadcrumbs.
Sprinkle the
topping over the mixture in the baking dish. Bake
until a skewer inserted in the centre comes out
clean, about 45 minutes. Serve warm or cold.
