Tea Breads, Buns And Muffins Recipes - Bilberry Tea Bread

Ingredients

  • 50g/4 tbsp butter or margarine, at room temperature

  • 175g/3/4 cup caster sugar

  • 1 egg, at room temperature

  • 120ml/1/2 cup milk

  • 225g/2 cups plain flour

  • 10ml/2 tsp baking powder

  • 2.5ml/1/2 tsp salt

  • 275g/3/4 cup fresh bilberries, or blueberries

FOR THE TOPPING

  • 115g/1/2 cup sugar

  • 40g/1/3 cup plain flour

  • 2.5ml/1/2 tsp ground cinnamon

  • 50g/4 tbsp butter, cut into pieces


Method:

  1. Preheat the oven to 190C/375F. Grease a 23cm/9in baking dish.

  2. With an electric mixer, cram the butter or margarine with the sugar until light and fluffy. Add the egg, beat to combine the mix in the milk until well blended.

  3. Sift over the flour, baking powder and salt and stir just enough to blend the ingredients. Add the berries and stir. Transfer to the baking dish.

  4. For the topping, place the sugar, flour, cinnamon and butter in a mixing bowl. Cut in with a pastry blender until the mixture resembles coarse breadcrumbs.

  5. Sprinkle the topping over the mixture in the baking dish. Bake until a skewer inserted in the centre comes out clean, about 45 minutes. Serve warm or cold.
