Tea Breads, Buns And Muffins Recipes - American-Style Corn Sticks

Ingredients

  • 1 egg

  • 120ml/1/2 cup milk

  • 15ml/1 tbsp vegetable oil

  • 115g/1 cup cornmeal or polenta

  • 50g/1/2 cup plain flour

  • 10ml/2 tsp baking powder

  • 45ml/3 tbsp caster sugar


Method:

  1. Preheat the oven to 190C/375F. Grease a cast-iron corn-stick mould.

  2. Beat the egg in a small bowl. Stir in the milk and vegetable oil, and set aside.

  3. In a mixing bowl, stir together the cornmeal or polenta, flour, baking powder and sugar. Pour in the egg mixture and stir wit a wooden spoon to combine.

  4. Spoon the mixture into the prepared mould. Bake until a skewer inserted in the centre comes out clean, about 25 minutes. Cool in the mould on a wire rack for 10 minutes before unmoulding.
