Special Occasion Cakes Recipes - Halloween Pumpkin Patch Cake

Ingredients

  • 175g/1 cup sugar paste icing

  • brown and orange food coloring

  • 2 x 20cm/8in round chocolate sponge cakes

  • 675g/3 cups orange-flavor butter icing

  • chocolate chips

  • angelica

MATERIAL/EQUIPMENT

  • wooden cocktail stick fine paintbrush

  • 23cm/9in round cake board

  • serrated scraper

  • No 7 writing nozzle greaseproof paper piping bag


Method:

  1. For the pumpkins, tint a very small piece of the sugar paste icing brown, and the rest orange. Shape some balls of the orange icing the size of walnuts and some a bit smaller. Make ridges with a cocktail stick. Make stems from the brown icing and secure with water. Paint highlights on the pumpkins in orange. Leave to dry on greaseproof paper.

  2. Cut both cakes in half horizontally. Use one-quarter of the butter icing to sandwich the cakes together. Place the cake on the board. Use two-thirds of the remaining icing to cover the cake. Texture the icing with a serrated scraper.

  3. Using a No 7 writing nozzle, pipe a twisted rope pattern around the top and base edges of the cake with the remaining butter icing. Decorate with chocolate chips.

  4. Cut the angelica into diamond shapes and arrange on the cake with the pumpkins.
