Special Occasion Cakes Recipes - Fudge-frosted Starry Roll

Ingredients

  • 23 x 33cm/9 z13in Swiss roll sponge

  • 175g/3/4 cup chocolate butter icing

  • 50g/2oz white chocolate

  • 50g/2oz plain chocolate

  • 75g/6 tbsp butter or margarine

  • 65ml/4 1/2 tbsp milk or single cream

  • 7.5ml/1 1/2 tsp vanilla essence

MATERIAL/EQUIPMENT

  • small star cutter

  • several greaseproof paper piping bag

  • No 19 star nozzle


Method:

  1. Unroll the sponge and spread with the butter icing. " and set aside

  2. Cut both cakes in half horizontally. Use one-quarter of the butter icing to sandwich the cakes together. Place the cake on the board. Use two-thirds of the remaining icing to cover the cake. Texture the icing with a serrated scraper.

  3. Using a No 7 writing nozzle, pipe a twisted rope pattern around the top and base edges of the cake with the remaining butter icing. Decorate with chocolate chips.

  4. Cut the angelica into diamond shapes and arrange on the cake with the pumpkins.
