Special Occasion Cakes Recipes - Flourless Fruit Cake

Ingredients

  • 450g/1 1/3 cup mincemeat

  • 350g/2 cups dried mixed fruit

  • 115g/1/2 cup ready-to-eat dried apricots, chopped

  • 115g/2/3 cup ready-to-eat dried figs, chopped

  • 115g/1/2 cup glace cherries, halved

  • 115g/1 cup walnut pieces

  • 225g/8-10 cups cornflakes, crushed

  • 4 eggs, lightly beaten

  • 410g/14 1/2oz can evaporated milk

  • 5ml/1 tsp mixed spice

  • 5ml/1 tsp baking powder

  • mixed glace fruits, chopped, to decorate


Method:

  1. Preheat the oven to 150C/300F/Gas 2. Grease a 25cm/10in round cake tin, line the base and sides with a double thickness of greaseproof paper and grease the paper.

  2. Put all the ingredients into a large mixing bowl. Beat together well.

  3. Turn into the cake tin and smooth the surface.

  4. Bake for about 1 3/4 hours or until a skewer inserted in the centre of the cake comes out clean. Allow the cake to cool in the tin for 10 minutes, then turn out on to a wire rack, peel off the lining paper and leave to cool completely. Decorate with the chopped glace fruits.
