Special Occasion Cakes Recipes - Daisy Christening Cake

Ingredients

  • 20cm round rich fruit cake

  • 45ml apricot jam, warmed and sieved

  • 675g marzipan

  • 900g royal icing

  • 115 sugar-paste icing

  • pink and yellow food coloring

  • 25cm round cake board

  • fine paint-brush

  • 5cm fluted cutter

  • wooden cocktail stick

  • 2 greaseproof paper piping bags

  • No 42 nozzle

  • pink and white ribbon


Method:

  1. Brush the cake with the apricot jam. Roll out the marzipan and use to cover the cake. Leave to dry overnight.

  2. Use a little royal icing to secure the cake to the board. Tint three quarters of the royal icing pink. Flat-ice the cake with three or four layers, using white for the top and pink for the side. Allow each layer to dry overnight before applying the next. Set aside a little of both icings in airtight containers.

  3. Make 28 daisies. For each daisy, shape a small piece of sugar-paste icing to look like a golf tee. Snip the edges and curl them slightly. Dry on greaseproof paper. Trim the stems and paint the edges pink and the centers yellow.

  4. To make the plaque, roll out the remaining sugar-paste icing and cut out a circle with the fluted cutter. Roll a cocktail stick around the edge until it frills. Dry on greaseproof paper, then paint the name and the edges with pink food coloring.

  5. Pipe twisted ropes around the top and base of the cake with the reserved white royal icing. Then pipe a row of stars around the top of the cake. Stick the plaque in the centre with royal icing. Stick on the daisies and decorate with the ribbons.
