Cloth-of-Roses Cake
Ingredients

20cm round light fruit cake
-
45ml apricot jam, warmed and sieved

675g marzipan
-
900g sugar paste icing
-
yellow, orange and green food coloring
-
115g royal icing
-
25cm cake board
-
5.5cm plain cutter petal cutter

thin yellow ribbon
Method:
-
Brush the
cake with apricot jam. Cover with marzipan and
leave to dry overnight.

Cut off
675g of the sugar paste icing
and divide in half. Color pale yellow and
pale orange.
-
Make a
greaseproof paper template for the orange icing by
drawing a 25cm circle round the cake board
then, using the plain cutter, draw scallops around
the circle.

Cover the cake
side with yellow sugar paste icing. Place the cake on
the board. Using the template, cut out the orange
sugar paste icing. Place on the cake and bend the
scallops slightly. Leave to dry overnight.

For the roses and
leaves, cut off three-quarters of the remaining
sugar paste icing and divide into four. Tint pale
yellow, deep yellow, orange, and marbled yellow and
orange. Make 18 roses. Tint the remaining icing
green. Cut out 24 leaves with a petal cutter. Dry on
greaseproof paper.

Secure the leaves
and roses with royal icing. Decorate the cake with
the ribbon.
