Special Occasion Cakes Recipes - Basket Weave Wedding Cake

Ingredients

  • 25cm/10in, 20cm/8in and 15cm/6in square Madeira cakes

  • 2.75kg/12 cups butter icing

 MATERIALS/EQUIPMENT

  • 30cm/12in square silver cake board

  • 20cm/8in and 15cm/6in thin sliver cake board

  • smooth scraper

  • 12 small greaseproof piping bags

  • NO 4 writing and basket weave nozzles

  • 1.5m/1 1/2yd pale lilac ribbon, 2.5cm/1in wide

  • 2.5m/2 1/2yg deep lilac ribbon, 5mm/1/4in wide

  • 30 fresh lilac-colored freesias


Method:

  1. Level the cake tops, then invert the cakes on to the boards and cover with butter icing. Use a smooth scraper on the sides and a palette knife to smooth the top. Leave to set for 1 hour.

  2. Pipe a line of icing with the No 4 writing nozzle on to the corner of the large cake, from the base to the top. Using the basket weave nozzle, pipe a basket weave pattern (see above photograph). Pipe all around the side of the cake and neaten the top edge with a shell border, using the basket weave nozzle. Repeat for the second cake.

  3. To decorate the top of the small cake, start at the edge with a straight plain line, then pipe across with the basket weave nozzle, spacing the lines equally apart. When the top is complete, work the design around the sides, making sure the top and side designs align. Leave the cakes overnight to set.

  4. Fit tile wide and narrow lilac ribbons around the board. Use the remaining narrow ribbon to tie eight small bows with long tails. Trim off the flower stems

  5. Assemble the cakes. Decorate with the bows and flowers.
