Recipes - Walnut And Pear Lattice Pie
Ingredients

450g/1lb short crust pastry
-
450g/2lb pears, peeled, cored and thinly sliced

50g/4 tbsp caster sugar
-
25g/3 tbsp plain flour
-
2.5ml/1/2 tbsp grated lemon rind
-
25g/1/4 cup raisins or sultanas
-
25g/4 tbsp chopped walnuts
-
2.5ml/1/2 tsp ground cinnamon
-
50g/1/2 cup icing sugar
-
15ml/1 tbsp lemon juice
-
about 10ml/2 tsp cold water
Method:

Preheat the oven
to 190C/325F. Roll out half of the pastry and use it
to line a 23cm/9in tin that is about 5cm/2in deep.

Combine the
pears, caster sugar, flour and lemon rind. Toss to
coast the fruit. Mix the raisins, nuts and cinnamon.
Put the filling into the pastry case and spread it
evenly.

Roll out he
remaining pastry and use to make a lattice top. Bake
the pie for 55 minutes or until the pastry is golden
brown on top.

Combine the icing
sugar, lemon juice and water in a bowl and stir
until smooth. Remove the pie from the oven. Drizzle
the glaze evenly over the top, on the pastry and
filling. Leave the pie to cool in its tin on a wire
rack.
