- Red Berry Sponge Tart
Ingredients
450g/4 cups soft berry fruits, such a raspberries
blackberries, blackcurrants, redcurrants,
strawberries and blueberries
2
eggs
50g/1/4 cup caster sugar, plus extra to taster
(optional)
15ml/1 tbsp flour
75g/3/4 cup ground almonds
vanilla ice cram, to serve
Method:
Preheat the oven
to 190C/375F. Grease and line a 23cm/9in pie tin
with greaseproof paper. Scatter the fruit n the vase
of the tin with a little sugar if the fruits are
tart.
Beat the eggs and
sugar together fro about 3-4 minutes, or until they
leave a thick trail across the surface. combine the
flour and almonds, the fold into the egg mixture
with a palette knife, retaining as much air as
possible.
Spread the
mixture on top of the fruit base, bake in the
preheated oven for 15 minutes, then turn out on to a
serving plate.
