Pies And Tarts Recipes - Red Berry Sponge Tart

Ingredients

  • 450g/4 cups soft berry fruits, such a raspberries blackberries, blackcurrants, redcurrants, strawberries and blueberries

  • 2 eggs

  • 50g/1/4 cup caster sugar, plus extra to taster (optional)

  • 15ml/1 tbsp flour

  • 75g/3/4 cup ground almonds

  • vanilla ice cram, to serve


Method:

  1. Preheat the oven to 190C/375F. Grease and line a 23cm/9in pie tin with greaseproof paper. Scatter the fruit n the vase of the tin with a little sugar if the fruits are tart.

  2. Beat the eggs and sugar together fro about 3-4 minutes, or until they leave a thick trail across the surface. combine the flour and almonds, the fold into the egg mixture with a palette knife, retaining as much air as possible.

  3. Spread the mixture on top of the fruit base, bake in the preheated oven for 15 minutes, then turn out on to a serving plate.
