Ingredients

  • 225g/1 cup cream cheese

  • 250ml/1 cup soured cream

  • 500g/5 cups frozen strawberries, thawed and sliced

FOR THE BASE

  • 115g/1 1/3 cups crushed digestive biscuits

  • 15ml/1 tbsp caster sugar

  • 65g/5 tbsp butter, melted


Method:

  1. For the base, mix together the biscuits, sugar and butter. Press the mixture over the base and sides of a 23cm/9in pie dish. Freeze until firm.

  2. Blend together the cream cheese and soured cream. Reserve 90ml/6 tbsp of the strawberries. Add the rest to the cream cheese mixture.

  3. Pour the filling into the biscuit base and freeze until firm, about 6 - 8 hours. To serve, spoon some of the reserved strawberries on top.
