Pies And Tarts Recipes - Crunchy Apple And Almond Flan

Ingredients

  • 75g/6 tbsp butter

  • 175g/1 1/2 cups plain flour

  • 25g/4 tbsp ground almonds

  • 25g/2 tbsp caster sugar

  • 1 egg yolk

  • 15ml/1 tbsp cold water

  • 1.5ml/1/4 tsp almond essence

  • 675g/1 1/2lb cooking apples

  • 25g/2 tbsp raisins

FOR THE TOPPING

  • 115g/1 cup plain flour

  • 1.5ml/1/4 tsp ground mixed spice

  • 50g/2 tbsp butter, cut in small cubes

  • 50g/4 tbsp demerara sugar

  • 50g/1/2 cup flaked almonds


Method:

  1. To make the pastry, rub the butter into the flour until it resembles breadcrumbs. Stir in the almonds and sugar. Whisk the egg yolk, water and almond essence together and mix into the dry ingredients to form a soft dough. Knead until smooth, wrap, and leave to rest for 20 minutes.

  2. For the topping, sift the flour and spice into a bowl and rub in the butter. Stir in the sugar and almonds. Roll out the pastry and sue to line a 23cm/9in loose-based flan tin. Trim the top and chill for 15 minutes.

  3. Preheat a baking sheet in the oven at 190C/375F. Peel, core and slice the apples thinly. Arrange in the flan in overlapping, concentric circles, doming the centre. Sprinkle with raisins.

  4. Cover with the topping mixture, pressing it on lightly. Bake on the hot baking sheet for 25-30 minutes, or until the top is golden brown and the apples are tender (test them with a fine skewer). Leave the flan to cool in the tin for 10 minutes before serving.
