Recipes - Chocolate Cheesecake Tart
Ingredients
350g/1 1/2 cups cream cheese
60ml/4 tbsp whipping cream
225g/generous 1 cup caster sugar
50g/1/2 cup cocoa powder
2.5ml/1/2 tsp ground cinnamon
3
eggs
whipped cream and chocolate curls, to decorate
FOR THE
BASE
75g/1 cup crushed digestive biscuits
40g/scant 1 cup crushed amoretti biscuits
75g/6 tbsp butter, melted
Method:
Preheat a baking sheet in
the oven at 180'C/350"F/Gas 4. For the
base, mix the crushed biscuits and butter in a
bowl. Press the mixture over the base and sides
of a 23cm/9in pie dish. Bake for 8
minutes. Leave to cool. Keep the oven on.
Beat the cream
cheese and cream together until smooth. Beat in the
sugar, cocoa and cinnamon until blended.
Add the eggs, one
at a time, beating just enough to blend.
Pour into the
biscuit base and bake on the baking sheet for 25-30
minutes. The filling will sink down as it cools.
Decorate with whipped cream and chocolate curls.
