Pies And Tarts Recipes - Chocolate Cheesecake Tart

Ingredients

  • 350g/1 1/2 cups cream cheese

  • 60ml/4 tbsp whipping cream

  • 225g/generous 1 cup caster sugar

  • 50g/1/2 cup cocoa powder

  • 2.5ml/1/2 tsp ground cinnamon

  • 3 eggs

  • whipped cream and chocolate curls, to decorate

FOR THE BASE

  • 75g/1 cup crushed digestive biscuits

  • 40g/scant 1 cup crushed amoretti biscuits

  • 75g/6 tbsp butter, melted


Method:

  1. Preheat a baking sheet in the oven at 180'C/350"F/Gas 4. For the base, mix the crushed biscuits and butter in a bowl. Press the mixture over the base and sides of a 23cm/9in pie dish. Bake for 8 minutes. Leave to cool. Keep the oven on.

  2. Beat the cream cheese and cream together until smooth. Beat in the sugar, cocoa and cinnamon until blended.

  3. Add the eggs, one at a time, beating just enough to blend.

  4. Pour into the biscuit base and bake on the baking sheet for 25-30 minutes. The filling will sink down as it cools. Decorate with whipped cream and chocolate curls.
