Recipes - Apple And Cranberry Lattice Pie
Ingredients
grated rind of 1 orange
45ml/3 tbsp orange juice
2
large cooking apples
170g/1 1/3 cups cram berries
70g/1/2 cup raisins
25g/4 tbsp walnuts, chopped
215g/generous 1 cup caster sugar
115g/1/2 cup dark brown sugar
15g/2 tbsp plain flour
FOR THE
CRUST
285g/2 1/2 cups plain flour
2.5ml/1/2 tsp salt
85g/6 tbsp cold butter, cut into pieces
85g/1/2 cup cold vegetable fat or lard, cut into
pieces
65-125ml/2-4fl oz iced water
Method:
For the crust,
sift the flour and salt, add the butter and fat and
rub in well. Stir in just enough water to bind the
dough. Form into two equal balls, wrap and chill for
a t least 20 minutes.
Put the orange
rind and juice into a bowl. Peel and core the apples
and grate into the bowl. Stir tin the cram berries,
raisins, walnuts, all except 1 tbsp of the caster
sugar, the brown sugar and flour. Place a baking
sheet in the oven and Preheat the oven to 200C/400F.
Roll out one ball
of dough about 3mm/1/8in thick. Transfer to a
23cm/9in pie plate and trim. Spoon the cranberry and
apple mixture into the shell.
Roll out the
remaining dough to a circle about 28cm/11in in
diameter. With a serrated pastry wheel, cut the
dough into 10 strips, 2cm/3/4in wide. Place five
strips horizontally across the top of the tart a t
2.5cm/1in intervals. Weave in five vertical strips
and trim. Sprinkle the top with sugar.
Bake for 20
minutes. Reduce heat to 180C/350F and bake until the
crust is golden and the filling is bubbling, about
15 minutes.
