Novelty and Fantasy Cakes Recipes - Tablecloth Cake

Ingredients

  • 20cm round sponge cake

  • 115g butter icing

  • 45ml apricot jam, warmed and sieved

  • 450g marzipan

  • 675g sugar paste icing

  • 115g royal icing

  • red food coloring

  • 25cm round cake board

  • spoon with decorative handle

  • 8 wooden cocktail s ticks sharp needle

  • skewer

  • 8 red ribbon bows

  • small greaseproof paper piping bags

  • NO 2 and No 0 plain nozzles


Method:

  1. Split and fill the cake with butter icing. Place on the board and brush with apricot jam. Cover with a layer of marzipan. Tint 450g/3 cups of the sugar-paste icing red and cover the cake and board. Roll the rest of the red fondant into a thin rope long enough to go round the cake. Stick around the base of the cake with water. Mark with the decorative handle of a spoon. Leave to dry overnight.

  2. Roll out the remaining icing to a 25cm/10in circle and trim. Lay this icing over the cake and drape the "cloth" over the wooden cocktail sticks set at equidistant points.

  3. Mark a 10cm/ 4in circle in the centre of the cake. Make a template of the flower design and transfer to the cake with a needle. Use a skewer to make the flowers; the red color should show through.

  4. Remove the cocktail sticks and stick on the bows with royal icing. With a No 2 plain nozzle and white royal icing pipe around the circle in the centre. With a No 0 plain nozzle, pipe small dots around the edge of the cloth. Color some royal icing red and pipe a name in the centre.
