Ingredients
3 egg whites
350g caster sugar
30ml cold water
30ml fresh lemon juice
1.5ml cream of tartar
red food coloring
20cm heart shaped sponge cake
85-115g icing sugar
30cm square cake board
small greaseproof piping bag
small nozzle
Method:
Make the icing by
combining 2 of the egg whites, the caster sugar,
water, lemon juice and cream of tartar in the top of
a double boiler or in a bowl set over simmering
water. With an electric mixer, beat until thick and
holding soft peaks, about 7 minutes. Remove from the
heat and continue beating until the mixture is thick
enough to spread. Color the icing pale pink.
Put the cake
on the cake board and spread the icing evenly on
the cake. Smooth the top and sides. Leave to set
for 3-4 hours, or overnight.
Place 1 tbsp of
the remaining egg white in a bowl and whisk until
frothy. Gradually beat in enough icing sugar to make
a stiff mixture suitable for piping.
Spoon the white
icing into a piping bag and pipe the decorations on
the top and sides of the cake as shown in the
photograph above.
