Ingredients

20cm round rich fruit cake
-
40ml apricot jam, warmed and
sieved
-
675g marzipan
-
450g sugar paste icing
-
115g royal icing
-
silver, gold lilac shimmer, red
sparkle, glitter green and primrose sparkle food
coloring and powder tints

25cm round cake board
Method:

Brush the cake
with the apricot jam. Use two-thirds of the marzipan
to cover the cake. Leave to dry overnight.

Cover the
cake with the sugar-paste icing. Leave to dry.

Place the cake on
a large sheet of greaseproof paper. Dilute a little
powdered silver food coloring and, using a loaded
paintbrush, flick it all over the cake to give a
spattered effect. Allow to dry.

Make templates of
two different-size moon shapes and three irregular
star shapes. Divide the remaining marzipan into six
pieces and Tint silver, gold, lilac, pink, green and
yellow. Cut into stars and moons using the templates
as a guide, cutting some of the stars in half.

Place the
cut-outs on greaseproof paper, brush each with its
own color powder Tint. Allow to dry.

Secure the cake
on the board with royal icing. Arrange the stars and
moons at different angles all over the cake,
attaching with royal icing, and position the halved
stars upright as though coming out of the cake.
Allow to set.
