Novelty and Fantasy Cakes Recipes - Box of Chocolates Cake

Ingredients

  • 15cm square sponge cake

  • 50g butter icing

  • 30ml apricot jam, warmed and sieved

  • 350g marzipan

  • 350g sugar paste icing

  • red food coloring

  • wrapped chocolates

  • 20cm square cake board

  • small paper sweet cases

  • 1.3m gold and red ribbon


Method:

  1. Split and fill the cake with butter icing. Cut a shallow square from the top of the cake, leaving a 1cm border around the edge. Place on the cake board and brush with apricot jam. Cover with a layer of marzipan.

  2. Roll out the sugar-paste icing and cut an 18cm/7in square. Ease it into the hollow dip and trim. Tint the  remaining sugar-paste icing red and use to cover the sides.

  3. Put the chocolates into paper cases and arrange in the box. Tie the ribbon around the sides and tie a big bow.
