Ingredients
15cm square sponge cake
50g butter icing
30ml apricot jam, warmed and
sieved
350g marzipan
350g sugar paste icing
red food coloring
wrapped chocolates
20cm square cake board
small paper sweet cases
1.3m gold and red ribbon
Method:
Split and fill
the cake with butter icing. Cut a shallow square
from the top of the cake, leaving a 1cm border
around the edge. Place on the cake board and brush
with apricot jam. Cover with a layer of marzipan.
Roll out the
sugar-paste icing and cut an 18cm/7in square.
Ease it into the hollow dip and trim. Tint the
remaining sugar-paste icing red and use to cover
the sides.
Put the
chocolates into paper cases and arrange in the box.
Tie the ribbon around the sides and tie a big bow.
