Novelty and Fantasy Cakes Recipes - Bowl-of-Strawberries Cake

Ingredients

  • 350g butter icing

  • red, yellow, green and claret food coloring

  • 20cm petal-shaped madeira ake

  • 45ml apricot jam, warmed and sieved

  • 675g sugar-paste icing

  • yellow powder tint

  • 25cm petal-shaped cake board

  • paint palette or small saucers

  • fine paint brushes

  • thin red and green ribbons


Method:

  1. Tint the butter icing pink. Cut the cake horizontally into three. Sandwich together with the butter icing. Brush the cake with apricot jam. Use 500g. cups of the sugar-paste icing to cover the cake. Place on the cake board and leave to dry overnight.

  2. For the strawberries, Tint three-quarters of the remaining sugar-paste icing red, and equal portions of the rest yellow and green. Make the strawberries, securing with water if necessary. Leave to dry on greaseproof paper.

  3. Put the red, green, yellow and claret food coloring in a palette and water them down slightly. Paint the bowl and strawberries, using yellow powder Tint to highlight the bowl.

  4. Decorate the cake with the ribbons. Secure two strawberries to the top of the cake, and arrange the others around the base.
