Low Fat Desserts Recipes - Tia Maria Gateau

Ingredients

  • 75g plain flour

  • 30ml instant coffee powder

  • 3 eggs

  • 115g caster sugar

  • For the Filling

  • 175g low fat soft cheese

  • 15ml clear honey

  • 15ml Tia Maria

  • 50g stem ginger, chopped

  • For the icing

  • 225g icing sugar, sifted

  • 10ml coffee essence

  • 5ml fat reduced cocoa

  • coffee beans (opitonal)


Method:

  1. Whisk the eggs and sugar in a bowl until thick and mousse-like, then fold in the flour mixture lightly. Turn the mixture into the prepared tin. Bake for 30-35 minutes or until firm and golden. Cool on a wire rack.

  2. Make the filling. Mix the soft cheese with the honey in a bowl. Beat until smooth, then stir in the Tia Maria and ginger. Split the cake in half horizontally and sandwich together with the Tia Maria filling.

  3. Make the icing. In a bowl, mix the icing sugar and coffee essence with enough water to make an icing which will coat the back of a wooden spoon. Pour three-quarters of the icing over the cake. Stir the cocoa into the remaining icing, spoon it into a piping bag fitted with a writing nozzle and drizzle the mocha icing over the coffee icing. Decorate with coffee beans, if desired.
