Low Fat Desserts Recipes - Tia Maria Gateau
Ingredients
75g plain flour
30ml instant coffee powder
3 eggs
115g caster sugar
For the Filling
175g low fat soft cheese
15ml clear honey
15ml Tia Maria
50g stem ginger, chopped
For the icing
225g icing sugar, sifted
10ml coffee essence
5ml fat reduced cocoa
coffee beans (opitonal)
Method:
Whisk the eggs
and sugar in a bowl until thick and mousse-like,
then fold in the flour mixture lightly. Turn the
mixture into the prepared tin. Bake for 30-35
minutes or until firm and golden. Cool on a wire rack.
Make the
filling. Mix the soft cheese with the honey in a
bowl. Beat until smooth, then stir in the Tia
Maria and ginger. Split the cake in half
horizontally and sandwich together with the Tia
Maria filling.
Make the icing.
In a bowl, mix the icing sugar and coffee essence
with enough water to make an icing which will coat
the back of a wooden spoon. Pour three-quarters of
the icing over the cake. Stir the cocoa into the
remaining icing, spoon it into a piping bag fitted
with a writing nozzle and drizzle the mocha icing
over the coffee icing. Decorate with coffee beans,
if desired.
