Low Fat Desserts Recipes - Spiced Apple Cake
Ingredients
225g self raising wholemeal
flour
5ml baking powder
10ml ground cinnamon
175g chopped dates
75g soft light brown sugar
15ml pear and apple spread
120ml apple juice
2 eggs, beaten
90ml sunflower oil
2 eating apples, cored and
grated
15ml chopped walnuts
Method:
Preheat the oven
to 180'C/350"F /Gas 4. Line and grease a 20cm/8in
deep round cake tin. Sift the flour, baking powder
and cinnamon into a mixing bowl, then mix in the
dates and make a well in the centre.
Mix the sugar
with the pear and apple spread in a small bowl.
Gradually stir in the apple juice. Add to the
dry ingredients with the eggs, oil and apples.
Mix thoroughly.
Spoon into the
prepared cake tin, sprinkle with the walnuts and
bake for 60-65 minutes or until a skewer inserted
into the centre of the cake comes out clean. Invert
on a wire rack, remove the lining paper and leave to
cool.
Cook's Tip: It is
not necessary to peel the apples - the
skin adds extra fiber and softens on cooking.
