Preheat the oven
to 220'C/425"F/Gas 7. Flour a baking sheet. Sift the
dry ingredients into a mixing bowl and make a well
in the centre.
Add the
buttermilk and mix quickly to a soft dough. Turn
onto a floured surface and knead lightly. Shape
into a round about 18cm/7in in diameter; place
on the baking sheet.
Cut a deep cross
on top of the loaf and sprinkle with a little flour.
Bake for 25-30 minutes, then transfer to a wire rack
to cool.
Cook's Tip: Soda bread needs a light
hand. The ingredients should be bound together
quickly in the bowl and kneaded very briefly. The
aim is just to get rid of the largest cracks, as the
dough becomes tough if handled for too long.
