Low Fat Desserts Recipes - Pear and Sultana Tea Bread

Ingredients

  • 25g rolled oats

  • 50g soft light brown sugar

  • 30ml pear or apple juice

  • 30ml sunflower oil

  • 1 large or 2 small pears

  • 115g self raising flour

  • 115g sultanas

  • 2.5ml baking powder

  • 10ml mixed spice 1egg


Method:

  1. Preheat the oven to 180.C/350"F/Gas 4. Line a 450g loaf tin with non-stick paper. Put the oats in a bowl with the sugar, pour over the pear or apple juice and oil, mix well and leave to stand for 15 minutes.

  2. Quarter, core and grate the pear(s). Add to the bowl with the flour, sultanas, baking powder, spice and egg. Using a wooden spoon, mix thoroughly.

  3. Spoon the tea bread mixture into the prepared loaf tin. Bake for 5 5-60 minutes or until a skewer inserted into the centre comes out clean.

  4. Invert the tea bread on a wire rack and remove the lining paper. Leave to cool.

  5. Cook's Tip: Health-food shops sell concentrated pear juice, ready for diluting as required.
