Low Fat Desserts Recipes - Parma Ham and Parmesan Bread

Ingredients

  • 225g self raising whole meal flour

  • 225g self raising plain flour

  • 5ml salt

  • 5ml freshly ground black pepper

  • 75g Parma ham, chopped

  • 30ml chopped fresh parsley

  • 25g freshly grated Parmesan cheese

  • 45ml Meaux mustard

  • 350ml buttermilk

  • skimmed milk, to glaze


Method:

  1. Preheat the oven to 200'C/400'F/Gas 6. Flour a baking sheet. Put the wholemeal flour in a bowl and sift in the plain flour, salt and pepper. Stir in the ham and parsley. Set aside about half of the grated Parmesan and add the rest to the flour mixture. Make a well in the centre.

  2. Mix the mustard and buttermilk in a jug, pour into the bowl and quickly mix to a soft dough..

  3. Turn onto a well-floured surface and knead very briefly. Shape into an oval loaf and place on the baking sheet.

  4. Brush the loaf with milk, sprinkle with the reserved Parmesan and bake for 25 -30 minutes until golden brown. Cool on a wire rack.

  5. Cook's Tip: When chopping the ham, sprinkle it with flour so that it does not stick together. Do not knead the mixture as for a yeast dough, or it will become tough. It should be mixed quickly and kneaded very briefly before shaping.
