Low Fat Desserts Recipes - Date and Apple Muffins

Ingredients

  • 150g self raising whole meal flour

  • 150g self raising white flour

  • 5ml ground cinnamon

  • 5ml baking powder

  • 25g soft margarine

  • 75g soft light brown sugar

  • 250ml apple juice

  • 30ml pear and apple spread

  • 1 egg, lightly beaten

  • 1 eating apple

  • 75g chopped dates

  • 15ml chopped pecan nuts


Method:

  1. Preheat the oven to 200'C/400'F/Gas 6. Arrange 12 paper cases in a deep muffin tin. Put the wholemeal flour in a mixing bowl. Sift in the white flour with the cinnamon and baking powder. Rub in the margarine until the mixture resembles breadcrumbs, then stir in the brown sugar.

  2. In a bowl, stir a little of the apple juice with the pear and apple spread until smooth. Add the remaining juice, mix well, then add to the rubbed-in mixture with the egg. Peel and core the apple, chop the flesh finely and add it to the bowl with the dates. Mix quickly until just combined.

  3. Divide the mixture among the muffin cases. Sprinkle with the chopped pecans.

  4. Bake the muffins for 20-25 minutes until golden brown and firm in the middle. Turn onto a wire rack and serve while still warm.
