Low Fat Desserts Recipes - Coffee Sponge Drops

Ingredients

  • 50g plain flour

  • 15ml instant coffee powder

  • 2 eggs

  • 75g caster sugar

  • For the filling (optional)

  • 115g low fat soft cheese

  • 40g chopped stem ginger


Method:

  1. Preheat the oven to 190.C/375'F/Gas 5. Line two baking sheets with non-stick paper. Sift the flour and coffee powder together.

  2. Combine the eggs and caster sugar in a heatproof bowl Place over a saucepan of simmering water. Beat with a hand­held electric whisk until thick and mousse-like: when the whisk is lifted a trail should remain on the surface of the mixture for at least 30 seconds.

  3. Carefully fold in the sifted flour mixture with a large metal spoon, being careful not to knock out any air.

  4. Spoon the mixture into a piping bag fitted with a 1cm/ 1/4in plain nozzle and pipe 4cm/1/2in rounds on the prepared baking sheets. Bake for 12 minutes. Cool on a wire rack. Sandwich together in pairs with a ginger-cheese filling (above) or a coffee icing, if you like.
