Low Fat Desserts Recipes - Cinnamon and Apple Gateau

Ingredients

  • 3 eggs

  • 115g caster sugar

  • 75g plain flour

  • 5ml ground cinnamon

  • For the filling and topping

  • 4 large eating apples

  • 15ml water

  • 60ml clear honey

  • 75g sultanas

  • 2.5ml ground cinnamon

  • 350g low fat soft cheese

  • 60ml reduced fat fromage frais

  • 10ml lemon juice


Method:

  1. Preheat the oven to 190'C/375'F/Gas 5. Line and grease a 23cm/9in sandwich cake tin. Whisk the eggs and sugar until thick, then sift the flour and cinnamon over the surface and carefully fold in with a large metal spoon.

  2. Pour into the prepared tin and bake for 25-30 minutes or until the cake springs back when lightly pressed. Cool on a wire rack.

  3. To make the filling, peel, core and slice three of the apples and cook them in a covered pan with the water and half the honey until softened. Add the sultanas and cinnamon, stir well, replace the lid and leave to cool.

  4. Put the soft cheese in a bowl with the fromage frais, the remaining honey and half the lemon juice; beat until smooth. Split the sponge cake in half, place the bottom half on a plate and drizzle over any liquid from the apples. Spread with two­thirds of the cheese mixture, then top with the apple filling. Fit the top of the cake in place.

  5. Swirl the remaining filling over the top of the sponge. Quarter, core and slice the remaining apple, dip the slices in the remaining lemon juice and use to decorate the edges.
