Low Fat Desserts Recipes - Chive and Potato Scones

Ingredients

  • 450g potatoes

  • 115g plain flour, sifted

  • 30ml olive oil

  • 30ml snipped chives

  • salt and freshly ground black pepper

  • low fat spread, for topping


Method:

  1. Cook the potatoes in a saucepan of boiling salted water for 20 minutes, then drain thoroughly. Return the potatoes to the clean pan and mash them. Preheat a griddle or heavy-based frying pan over low heat.

  2. Tip the hot mashed potatoes into a bowl. Add the flour, olive oil and chives, with a little salt and pepper. Mix to a soft dough.

  3. Roll out the dough on a well-floured surface to a thickness of 5 mm and stamp out rounds with a 5cm/2in scone cutter, re-rolling and cutting the trimmings.

  4. Cook the scones, in batches, on the hot griddle or frying pan for about 10 minutes until they are golden brown. Keep the heat low and turn the scones once. Spread with a little low-fat spread and serve immediately.

  5. Cook's Tip: Use floury potatoes such as King Edwards. The potatoes must be freshly cooked and mashed and should not be allowed to cool before mixing. Cook the scones over low heat so that tile outside does not bUT11 before the inside is cooked.
