- Cheese and Onion Herb Stick
Ingredients
15ml sunflower oil
1 red onion, chopped
450g strong white flour
5ml salt
5ml mustard powder
10ml easy-blend dried yeast
45ml chopped fresh herbs, such
as thyme, parsley, marjoram or sage
75g grated reduced-fat cheddar
cheese
300ml hand-hot-water
Method:
Lightly oil two
baking sheets. Heat the oil in a frying pan and fry
the onion until well browned.
Sift the
flour, salt and mustard powder into a mixing
bowl. Stir in the yeast and herbs. Set aside
30ml/2 tbsp of the cheese. Add the rest to the
flour mixture and make a well in the centre. Add
the water with the fried onions and oil;
gradually incorporate the flour and mix to a
soft dough, adding a little extra water if
necessary.
Turn the dough
onto a floured surface and knead for 5 minutes until
smooth and elastic. Divide the mixture in half and
roll each piece into a stick 30cm/12in in length.
Place each bread
stick on a baking sheet, make diagonal cuts along
the top and sprinkle with the reserved cheese. Cover
and leave until doubled in size. Preheat the oven to
20.C/425r/Gas 7.
Bake the loaves
for 25 minutes or until the bread sounds hollow when
tapped underneath.
