Grease two baking
sheets. Sift the flour, salt, yeast and sugar into a
mixing bowl, stir in the caraway seeds and make a
well in the centre. Add the water and gradually mix
the flour to make a soft dough, adding a little
extra water if necessary.
Turn onto a
lightly floured surface and knead for 5 minutes
until smooth and elastic. Divide the mixture
into 20 pieces and roll each one into a
30cm/12in stick.
Arrange the bread
sticks on the baking sheets, leaving room to allow
for rising. Leave for 30 minutes until well risen.
Meanwhile, preheat the oven to 220'C/425 "F/Gas 7.
Bake the bread
sticks for 10-12 minutes until golden brown. Cool on
the baking sheets.
