Low Fat Desserts Recipes - Banana and Ginger Tea Bread

Ingredients

  • 175g self raising flour

  • 5ml baking powder

  • 40g soft margarine

  • 50g soft light brown sugar

  • 50g drained stem ginger, chopped

  • 60ml skimmed milk

  • 2 ripe bananas, mashed


Method:

  1. Preheat the oven to 180.C/350"F/Gas 4. Line and grease a 450g loaf tin. Sift the flour and baking powder into a mixing bowl.

  2. Rub in the margarine until the mixture resembles bread crumbs, then stir in the sugar.

  3. Add the ginger, milk and mashed bananas and mix to a soft dough.

  4. Spoon into the prepared tin and bake for 40-45 minutes. Run a palette knife around the edges to loosen them, turn the tea bread onto a wire rack and leave to cool.
