Low Fat Desserts Recipes - Banana and Cardamom Bread

Ingredients

  • 10 cardamom pods

  • 400g strong white flour

  • 5ml salt

  • 5ml easy blend dried yeast

  • 150ml hand hot water

  • 30ml malt extract

  • 2 ripe bananas, mashed

  • 5ml sesame seeds


Method:

  1. Grease a 450g/11b loaf tin. Split the cardamom pods. Remove the seeds and chop the pods finely.

  2. Sift the flour and salt into a mixing bowl, add the yeast and make a well in the centre. Add the water with the malt extract, chopped cardamom pods and bananas. Gradually incorporate the flour and mix to a 50ft dough, adding a little extra water if necessary.

  3. Turn the dough onto a floured surface and knead for 5 minutes until smooth and elastic. Shape into a plait and place in the prepared tin. Cover loosely with a plastic bag (ballooning it to trap the air) and leave in a warm place until well risen. Preheat the oven to 220'C/425'F/Gas 7.

  4. Brush the plait lightly with water and sprinkle with the sesame seeds. Bake for 10 minutes, then lower the oven temperature to 200'C/400"F/Gas 6. Cook for 15 minutes more, or until the loaf sounds hollow when tapped underneath. Remove to a wire rack to cool.
