Hints and tips: Basic Food Hygiene

  • If using eggs, make sure you buy them from a reputable source, store them in a cool place and use by the sell-by date.

  • Some of the most sensational desserts are made with raw eggs. As there is a minimal risk of them containing salmonella bacteria, do not recommend you give them to infants or toddlers, people who are very old or infirm, or pregnant women. If you are in any doubt, consult your doctor.

  • When leaving food to cool, cover loosely with foil, a clean tea towel (disk cloth) or Clingfilm (plastic wrap) to protect from flies, dust etc...

  • Always wash your hands before preparing food.

  • The back long hair and don't wear rings or nail varnish.

  • Wear an Apron.

  • Keep work surfaces clean and tidy.

  • Never lick your fingers or dip the same spoon back in the food once tasted.

  • Always make sure food is completely cold before placing it in the fridge.

  • Always transfer leftovers to a clean container and cover with a lid, Clingfilm (plastic wrap) or foil before storing in the fridge.

  • If reheating a pudding, make sure it is piping hot right through, not just lukewarm.
