Method:

Put the sugar in a saucepan and add the water.
Heat gently until the sugar has dissolved, then
increase the heat and boil for 1 minute. Add the
wine, spices and citrus zests and simmer for
about 10 minutes.

Peel the pears. With a small pointed vegetable
peeler, remove the cores. Brush with lemon juice
immediately, then lower them into the wine
mixture. Cover
with a circle of greaseproof
paper and cook gently for about
30 to 35 minutes until
tender. Remove from the heat and
leave to cool until lukewarm.

Lift the pears carefully out of
the spiced wine and place in serving bowls.
Strain the cooking liquid into a clean pan and
boil rapidly until reduced by half. Pour over
and around the pears and serve warm.
